The quince is king! Long live the quince! The romantically fragrant fruit is the premier feature on December’s cocktail menu. And so it should be. It is superbly in season and features in French cuisine at Christmas time as part of the Provence Christmas traditions making it a festive ingredient to boot. Perfect for this time of year.
The quince must be cooked in order to make it edible. We have made a beautiful confit of quince jam and strained off the juices to make a sweet, rich syrup both of which are characteristic in three of our cocktail changes this month.
First up is ‘God Save the Quince’. A refreshing long drink using Sacred vodka and incorporating both the quince jam and syrup. The sweetness of the quince is offset with the tartness of lemon juice and festive favourite, cranberry. This results in a drink that has an intoxicatingly exotic perfume and delightful finish on the palate.
An equally refreshing drink is our seasonal twist on a classic producing a rosy, amber-coloured ‘Quincy Bellini’. The homemade quince jam is topped with sparkling wine to produce an effervescent cocktail perfect for kicking off the party season.
Quince is also featured in the unusual combination of flavours found in ‘Tossing the Quince’. This time homemade quince syrup is combined with rich hazelnut liqueur, Angostura bitters and the American full-bodied and complex Four Roses bourbon. This produces a balanced old-fashioned style cocktail that certainly packs a punch.
Two of our November Gin School superstars feature in our next cocktail (and if you’re a fan of gin then our Head Barman, Fredi, invites you to try his Quince Gin special infusion on display behind the bar). Charlotte’s Bistro is one of the first bars to showcase the newly launched Two Birds Cocktail gin in ‘The Sparrow “lost in the woods”’. This has been mixed with the distinctive and unique Kamm & Sons, the dichotomous sweet and savory cardamom spice, and the fresh citrusy flavours of lime jam and lemon juice. Served as a martini this sorbet-like cocktail makes an excellent aperitif.
Can an original ever be really improved? We think so. The ‘Chocolate Pistol’ is inspired by the classic Espresso Martini but our version produces a indulgent cocktail with overtones of salted caramel and delectable chocolate. Using the warm and spicy Jose Cuervo Traditional tequila, rich mocha, sugar and a pinch of sea salt, this drink will delight and enchant the imbiber.
The final feature sees the return of one of our signature drinks, the fruity, dark, classic that is ‘Sine Qua Non’. A distinctly silky grape base forms this cocktail thanks to the floral G-Vine Nouaison gin. The almondy and oxidised Oloroso sherry is mixed with plum bitters to provide an outstanding depth of flavour. Garnished with dried fruit this will have you hankering after your Christmas pudding in no time.
