This month Fredi has been combining the first soft summer fruits with herbs to create a taste sensation.

This special cordial is lovingly made by using apricots – just in season – and creating a puree which is then strained and infused with tarragon giving the cordial a distinctive aniseed flavor. Strained once again and then sugar is added creating a fruity, earthy and elegant flavor. It features as a beautiful Aperitif in ‘The last king of Scotland’ combined with Whisky and Campari. Also in the ‘Man with a Beard’ together with Rum, Amaretto and egg white.

Another refreshing new cocktail to celebrate the arrival of Spring is ‘One Foot on the Grass’ combining Gin, fresh cucumber juice, elderflower cordial and freshly squeezed lemon juice. It is served long.
