Cured Beef . Piccalilli . Bitter Leaves
Similar in style to carpaccio, this bavette cut of Clwydian Vale beef is cured in salt, honey, spices, thyme and garlic and is full of flavour and texture. Freshly made Piccalilli packed with cauliflower, baby onions, carrot, cucumber are blended with a mix of English and wholegrain Pommery mustard. Served with seasonal foraged bitter green mustard leaves and watercress.
Lee says: “The two mustards give the Piccalilli a great balance of kick and sweetness and it makes the perfect summer starter.”
Banana Tarte Tatin . White Russian Ice Cream
An X-Factor ‘gold buzzer’ of a dessert – warm caramelised banana on a light puff pastry base, topped with a divine ice cream blend of vodka and Kahlua for the ultimate in decadence.
Lee says: “The White Russian Ice Cream is back on the menu due to popular demand – it’s a real favourite and goes perfectly with this banana tatin.”
