We’ve gone big, bold classics this month, think of a Spring bistro menu bucket list and we’ve nailed it. Chef Michal is like an over-excited kid looking at a pile of presents, we’ve had to limit him to seven (!) new dishes all featuring wonderful British produce.
What’s on the menu…
Wye Valley Asparagus . Pheasant Egg Sauce . Capers
Beautiful English asparagus, paired with a yolk-heavy pheasant’s egg for extra richness and a caper and parsley emulsion for freshness.
Michal says: “It’d just be a crime not to have asparagus on the menu. This is a traditional and simple combination and makes a great starter to any lunch or dinner.”
Buffalo Mozzarella . Heritage Tomatoes . Basil Pesto
West Sussex Heritage tomatoes & buffalo Mozzarella are dressed with a little light basil pesto and balsamic.
Michal says; “This is a classic combo that just feels fresh and Spring-like. I’ve added a little twist to pep it up, but the tomatoes are the star.”
English Garden Pea Soup . Smoked Ham Hock & Pecorino
New season English garden peas are never sweeter, served with ham hock pieces braised overnight, freshly grated pecorino, fresh pea shoots – or without the ham hock as a vegetarian option.
Michal says: “The ham and cheese marries together and brings another dimension to the dish with the saltiness complimenting the sweet peas.”
Cornfed Chicken Breast . Caramelised Potato Gnocchi . Broad Beans & Morels
Succulent cornfed chicken breast is simply roasted skin-side down with broad beans for a little seasonality and morels for a little luxury – and perfect gnocchi!
Michal says: “My sous chef at Chez Bruce was Italian and he used to kill us over gnocchi! They had to be perfect, light & fluffy but hold their shape – when they’re right they puff up beautifully when caramelised.”
Pan Fried Shetland Salmon . Crushed Jersey Royals . Asparagus
Line caught Shetland salmon accompanied by mint-infused, crushed Jersey Royals, asparagus and tarragon mayonnaise.
Michal says: “Instead of a classic hollandaise, our tarragon mayonnaise brings a touch of aniseed flavour as contrast.”
Soft Cheese Dumplings . Broad Bean & Pea Fricassée
Fresh broad beans in a pea ‘risotto’ with light lemon & ricotta dumplings & pea shoots. It’s Spring in a dish!
Iced Lemon Parfait . Marinated English Strawberries . Strawberry Sorbet . Crumble
A simple showcase of British strawberries – so light it’s almost a palate cleanser.
