Gin-cured Salmon . Cucumber. Lemon

A Bistro favourite, the salmon is cured in gin, juniper and pink peppercorns for depth of flavour and paired with pickled cucumber and lemon purée. A light & fresh dish, it’ll keep that summery feeling going – it’s basically salmon with a gin and tonic!

This deliciously vibrant green dish showcases the season’s peppery watercress alongside crumbly Berkswell cheese – the English answer to parmesan – for an original and fresh risotto.

A roll-call of classic autumn favourites, this rich and indulgent piece of beef from local Ealing butchers, Hook & Cleaver, is slow roasted and then pan-fried to caramelise the outside. Served with puréed and roasted artichoke alongside kale with freshly grated horseradish for a little peppery kick.
